Most honey on the market is heated, filtered and often blended with syrup. Real, raw honey behaves differently — here is what to look for.
1. It crystallises
Raw honey (especially mustard flower honey) slowly turns grainy in winter. That is natural glucose crystallising, not sugar being added. Warm the jar in water and it becomes liquid again.
2. It smells of flowers
Each type of honey has its own aroma — lychee is fruity, black seed is herbal, Sundarban is floral and tangy. Syrup just smells sweet.
3. Buy tested honey
Home tests are only hints. The surest way is to buy from a seller who lab-tests every batch — like we do.
