We simmer fresh butter on a low flame for hours, the traditional way, until the milk solids turn golden and the ghee takes on a nutty aroma. The result is grainy, fragrant and pure.
Use it on hot rice, in polao and biryani, for sweets, or a spoon in warm milk.
